Il est produit à l'ouest et au sud de la ville de Pau. D'ailleurs, son nom vient de la ville « Jurançon« , qui est une commune limitrophe de Pau. Le vignoble de Jurançon en AOC comprend près de 1 000 hectares, et ce dernier est classé AOC depuis 1936, soit parmi les premiers vignobles de France.
